Berry Good Sweet Potatoes

  • 2 large sweet potatoes
  • 1 cup dried berries (or other dried fruit)
  • 1/4 cup walnuts
  • 3 tbsp olive oil
  • 1/4 tsp cinnamon
  • Salt & pepper to taste
  • 3/4 cup chopped parsley, divided

Serving Size: 2-3 Servings

Prep Time: 10 minutes

Cook Time: 20 minutes


1. Preheat oven to 400 degrees.

2. Chop sweet potatoes into 1/2-inch chunks. Toss with 2 tbsp olive oil, salt, and pepper, and half the parsley and spread evenly onto a baking sheet. Bake for 20 minutes.

3. Toast walnuts in the oven or on the stovetop until fragrant.

4. Mix roasted sweet potatoes, walnuts, craisins, and remaining parsley. Add more salt and pepper and/or olive oil if needed.
