Ingredients:

Chia Jam:

  • 1 cup berries, frozen or fresh

  • Fresh lemon juice, 2-3 tsp

  • 1 tbsp chia seeds

Prep Time: 2 minutes

Cook Time: 10-15 minutes

PREPARATION

1. Over medium heat, cook 1 cup frozen (or fresh) berries and lemon juice for about 10-15 minutes, or until berries are soft.

2. Smash berries with a fork (or potato masher) and bring to a boil for 2 minutes.

3. Take off heat and stir in chia seeds. Let cool and berries will thicken (and chia seeds will soften) like jam.

  • This recipe can be easily doubled.

  • Use one type of berry or a variety (we love a variety!)

  • Frozen berries are easiest for prep and most nutritious.

  • Top oatmeal, yogurt, waffles, pancakes, peanut butter sandwiches, crackers, banana bread, muffins, or cereal with chia jam. You can even mix it with plain yogurt and freeze it into popsicle molds for a cool treat!
