Lemon Poppy Seed Oat Waffles

Delicious and easy waffles that can be made and frozen for future use!

Ingredients:

  • 1 ½ cups oat flour*
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup whole milk or almond milk
  • ¼ cup + 1 tbsp melted coconut oil, melted
  • 2 large eggs
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp poppy seeds
  • 1 tbsp lemon zest

*

Make oat flour by processing rolled oats in a food processor until it resembles flour.

Serving Size: 3 servings, makes 6 square waffles

Prep Time: 15 minutes

Cook Time: 15 minutes

PREPARATION

1. Mix dry ingredients

 2. Mix wet ingredients. Pour wet ingredients into the dry ingredients (except for poppyseeds and lemon zest).

 3. Once mixed, add poppy seeds and zest and stir.

 4. Let the batter rest for 10 minutes and heat waffle iron. Stir before placing into the waffle iron (don’t place waffles on top of each other to keep them crisp)

 5. Top with a little real maple syrup or plain whole milk yogurt with fruit, or even stewed berries (cook fresh or frozen berries with lemon juice on the stove until they become soft and easy to smush).
