Butternut Squash Mac & Cheese

Mac & Cheese with a yummy and nutritious twist, plus it's simple to make!

  • 1 cup peeled and cubed butternut squash
  • 1/3 cup milk
  • 2/3 cup grated white cheddar cheese
  • 1 tbsp butter
  • 8 oz pasta
  • 1/2 cup frozen peas
  • Salt & Pepper for taste

Serving Size: 2 Cups

Prep Time: 15 minutes

Cook Time: 15 minutes


1. Bring a large pot of water to a boil. Add the squash and cook for about 10 minutes. Using a large slotted spoon, transfer the squash to a blender.

2. Add the milk, cheese, and butter to the blender with the squash and blend until smooth.

3. Using the same pot of squash water, bring it to a boil again. Add pasta and cook until al dente. Add frozen peas for 2 minutes while the pasta is still cooking.

4. Drain pasta and peas. Toss with butternut squash/cheese sauce. Adjust salt if necessary.

5. Enjoy!
