Mamas Monster Cookies
MAMA'S MONSTER COOKIES
Nutritious & delicious cookie recipe for when you become (or to prevent!) a hangry mommy monster!
Essential Pregnancy Nutrients:
Fiber: Oatmeal, Banana
Iron: Oatmeal
Omega 3: Walnuts & Flaxseed
Vitamin C & Potassium: Banana
Magnesium: Almonds & Peanut Butter
Ingredients:

2 cups rolled oats

1/2 tsp cinnamon

1/2 tsp baking powder
-
1/2 tsp baking soda
-
1 tbsp ground flax seed
-
2 ripe bananas, mashed
-
1/2 cup unsalted natural peanut butter (or preferred nut butter or sun butter)

2 tbsp honey (or maple syrup)
-
1 tsp vanilla
-
1/4 cup walnuts, unsalted
-
1/4 cup almonds, unsalted

1/4 chocolate chips, raisins, craisins, optional
PREPARATION

Position rack in the center of the oven.

Preheat the oven to 325 degrees. Line a sheet pan with parchment paper.

In a food processor, add 1 cup rolled oats and nuts. Process to chop. In a bowl, add oats, oats/nuts mix, cinnamon, baking powder, baking soda, and ground flax. Stir to combine.

In another bowl, mix together the mashed banana, peanut butter (or other nuts/seed butter), honey (or maple syrup), and vanilla.

Add the wet ingredients to the dry ingredients and stir to combine.

Scoop dough using a scant 1/4 cup measuring cup to form cookies.

Flatten the top of each cookie.

Bake for 15-17 minutes and cool before storing in an airtight container.
