Upgraded and healthy grilled cheese sandwich!

Merry Grilled Cheese


  • 1 cup sliced beets
  • 2 tsp olive oil
  • About 1 cup shredded mozzarella
  • 3-4 basil leaves (optional)
  • 4 slices of whole-grain bread
  • 1 cup or 1 bunch of spinach
  • butter


Servings: 2 sandwiches

Prep Time: 15 minutes

Cook Time: 5 minutes


1. Preheat oven to 400 degrees. Toss beets in olive oil and some sea salt. Spread on a parchment-lined baking pan. Roast for 15 minutes (or use already peeled refrigerated beets).

2. Load bread with beets, shredded mozzarella, torn basil pieces, and spinach. Top with the other slice of bread.

3. Heat skillet on medium and add some butter (or oil). Cook the sandwiches until toasty and melted, about 3 minutes on each side.

4. Enjoy!
