Monster Pumpkin Cookies
A fun and healthy way to enjoy pumpkin!
Essential Pregnancy Nutrients:
Fiber: Oatmeal, Chia Seeds & Pumpkin

Omega 3: Chia Seeds
Vitamin A: Pumpkin
Ingredients:
- 2.5 cups rolled or quick oats
- 1 tbsp chia seed
- 1 cup pumpkin purée
- 2-3 tbsp maple syrup
- 1 tsp cinnamon
- 1/2 cup chocolate chips
Serving Size: 12 Cookies
Prep Time: 5-10 minutes
Cook Time: 10 minutes
PREPARATION
1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
2. Mix all ingredients in a bowl to form a thick dough.
3. Use your hands to create 12 cookie shapes. Place on the parchment-lined baking sheet.
4. Bake for 10 minutes. Remove from oven and let cool for a few minutes before enjoying!
5. Store in an airtight container for up to 3 days or in the refrigerator for up to 6-7 days. Cookies can also be frozen for up to 3 months.
