PESTO PASTA

PESTO SAUCE CAN BE FROZEN IN ICE CUBE TRAYS AND THAWED OVERNIGHT!

Ingredients:

  • 1/3 cup walnuts

  • 1 cup fresh basil

  • 1 cup fresh arugula or spinach

  • ¼ cup grated Parmesan; can omit

  • 1 tbsp lemon juice

  • 2 cloves garlic

  • ½ tsp sea salt

  • ¼ cup extra virgin olive oil

  • 1 pound whole-wheat pasta

Servings: about 2 

Serving size: 1 1/2 cups

Prep Time: 5 minutes

Cook Time: 10 minutes

PREPARATION

1. Make pesto in a food processor, set it aside.

2. Boil water for pasta, add some salt and cook until al dente. Reserve ½ cup of pasta water.

3. Mix pasta with pesto (thin out with a bit of pasta water), top with beans or grilled chicken for protein.

4. Enjoy!
