Potato Frittata

Easy to make and easy to keep down. Enjoy this during the first trimester, especially when you're craving plain foods. Feel free to add green veggies if you can stomach them!

Potato Frittata


  • 4 eggs

  • 1 russet potato, diced small

  • Salt and pepper, to taste

  • 2 tbsp olive oil

Serving: 2 servings

Prep Time: 5 minutes

Cook Time: 15 minutes


  1. Heat medium-large skillet on medium heat, add olive oil. Cook potatoes until soft and golden. Add veggies, if using.​

  2. Scramble eggs and add them to the pan. Cook on the bottom, lift sides, and tilt the pan to cook the runny egg. Flip over and cook on the other side until cooked through. Alternatively, finish cooking in a 350-degree oven.

  3. Enjoy with a whole-grain Italian roll.
