Merry Grilled Cheese
Upgraded and healthy grilled cheese sandwich!

Fiber: Carrots, Beets & Apple
Folate: Beets
Vitamin C: Apples
Ingredients:
- 1 cup shredded carrots
- 2 cups beets, chopped
- 2 apples, diced
- Fresh lemon juice, 1 lemon
- 2 Tbsp olive oil
- 1/2 cup sunflower seeds
- Sea salt, to taste
Servings: 2-4
Prep Time: 10 minutes
PREPARATION
- Cut apples and beets.
- Mix together the carrots, beets, and apples.
- Make the dressing by mixing the lemon juice, olive oil, and sea salt to taste.
- Toss the veggies with the dressing and top with sunflower seeds.
- Enjoy
